Paccheri con pesce spada, melanzana e pomodoro pachino.

Oggi vi presento un piatto inventato da me: Paccheri con pesce spada, melanzana e pomodoro pachino.

Ingredienti per 4 persone:

Gr. 500 di pesce spada tagliato a cubetti
N.1 melanzana sbucciata
Gr. 100 di ciliegino pachino
Foglie di mentuccia
Capperi di Sicilia
Origano di Sicilia
Uno spicchio d’aglio
Sale e pepe bianco
Mezzo bicchiere di vino bianco


Rosolate l’aglio, aggiungete la mentuccia giusto il tempo di rosolare, aggiungere il pesce spada per un minuto appena.

Togliete il pesce spada e mettetelo in un piatto, vi servirà solo alla fine.

Aggiungete la melanzana fatta a dadini e lasciatela rosolare fino a quando diventa dorata, adesso aggiungete il pomodoro pachino, i capperi e l’origano e fate cuocere per qualche minuto, ora aggiungete il pesce spada che sfumerete con il vino, mettete un pizzico di sale e se volete del pepe bianco.

Io consiglio sempre di completare la cottura dei paccheri in padella, il tutto avrà un sapore più corposo.
